The guys are roasting the pig from the greased pig race, 14 July 1944. Part of the 14 July Anniversary Mule Race was a greased pig race for a prize, probably a case of beer. The GI's who caught the pig, in spite of the farmer's pleading for his pig back, roasted it and ate it. They said it was the best meal they had in Italy - and also the most expensive. The CO made them pay for it.
